Squash, Apple & Carrot Muffin with Goji Berry

Ingredients :

1 carrot

150gr butternut squash

1 green� smith apple

60-80gr Goji barry � (by personal taste) or dried cranberries.

1/2 cup coconut oil

2 eggs

1/2 cup of brown sugar

2� cups of flour ( I use half� spelt flour and half white flour)

1 tea spoon of cinnamon

1 tea spoon of soda or baking powder


Preparation:

  1. Peel the carrot, squash and apple and� slice� them in food processor for small pieces and put aside.
  2. Mix the dry ingredients separately: cinnamon, baking powder flour and sugar
  3. Whisk the eggs and add them to the fruit mix, together with the oil. Then start adding the dry ingredients� ( cinnamon, sugar, baking powder and flour ) and mix everything gently with a spatula.
  4. Separate� into muffin cases and bake in a preheated oven.
